Potato Bake is a classic side dish to many an Aussie gathering. It is simple, delicious and works in any season. Whether paired with a warm hearty meat dish on a cool day or added to the spread at a hot summer bbq (or cookout), potato bake is a handy little dish to have in your repertoire!
Any special meals and celebrations often include potato bake in the meal plan. It is a common sight at pot luck dinners and birthdays. It is honestly hard to beat the creamy, garlicy deliciousness of a potato bake. To me this is pure comfort food.
This is the first year I have grown my own potatoes so I am super excited to try this old favorite recipe on spuds I pulled right from my back yard. I grew red potatoes along our fence this year and they are super yummy! There is just nothing like home grown produce.
Potato Bake Ingredients:
6 – 8 Potatoes
1 large Onion
Several cloves garlic (according to taste)
500ml Heavy Cream
Salt
Pepper
Grated Cheese (2 – 3 cups)
Method:
Peel and wash potatoes. Thinly slice potatoes and onion. Peel and mince garlic.
Layer half of the potatoes in the bottom of a casserole dish. Layer half the onion and garlic on top of the potatoes and sprinkle with salt and pepper. Pour over half of the cream.
Repeat layering with the remainder of the potatoes and onions, garlic, salt and pepper. Pour over the remainder of the cream and top with grated cheese.
Bake in a moderate oven (180 Celcius or 350 Fahrenheit) for 1 to 1.5 hours or until potatoes are tender.
If cheese begins to burn or go too dark, cover with aluminum foil until cooked.
Remove from oven and allow to sit for 10 minutes before serving.
