Who doesn’t love a creamy cool potato salad? It is perfect as a side dish for a summer bbq or can stand alone as a quick hearty meal. I love making a big potato salad at the beginning of the week and having it to use for quick easy lunches in the coming days.
This summer I am particularly excited about potato salad because for the first time ever I am using potatoes that I have grown myself! It was so exciting to dig in the ground with my family, searching for the lovely red gems. Loud exclamations and giggles of glee would accompany each new sighting as they emerged from the soft brown earth. So satisfying! We have already used them many times, baked, mashed and in soup and they are creamy deliciousness at its best!
If you haven’t tried growing potatoes before I highly recommend it. So simple and so much fun! And truly digging potatoes has to be the most satisfying of all garden tasks!
Potato Salad Ingredients:
8 – 10 potatoes diced
Handful of fresh mint
Handful of fresh parsley
One or two shallots or green onions
Handful of fresh green beans
Diced Bacon
Homemade mayonaise
Salt
Pepper
Method:
Wash and dice potatoes. Put in pot and cover with an inch of water and bring to the boil. Turn heat off as soon as it boils and allow to keep cooking until just tender. Strain potatoes and rinse in cold water to stop the cooking process. Set aside to cool.
Fry bacon in skillet on medium heat until just crispy and set aside to cool.
Finely chop herbs and onions.
Combine potatoes, bacon, herbs, onions and enough mayonnaise to easily cover all ingredients. Salt and pepper to taste. Mix gently until fully combined.
Serve with a sprig of mint and parsley.
